Jalapeño Salmon Enchiladas with Salsa Verde
 
1 can chopped green chilis
1 pint sour cream
1 onion, finely chopped
1 or 2 cans 7.75oz Dave's Jalapeño Salmon (drain extra liquid)
2 cups grated Cheddar cheese, divided
Salt and Pepper to taste
1 dozen corn tortillas
1 can tomato sauce
2 cups green enchilada sauce
 
Mix in bowl, chilis, onion, sour cream, jalapeno salmon and 1 1/2 cups cheese, add seasoning to taste.
Fill tortillas with mixture; place in greased baking pan. Mix tomato and enchilada sauce. Pour over top of enchiladas.
Serve with sour cream.
